~Summer Party Recipes~
Banana Honey Chicken Kabobs
8 chicken thighs, skinned and boned
1 Tbsp. white wine vinegar
1 Tbsp. lemon juice
1 Tbsp. honey
6 Tbsp. olive oil
1 clove garlic, finely chopped
salt and pepper to taste
4 slices smoked bacon
2 bananas
Cut chicken into bite-size pieces. Combine the vinegar, lemon juice, honey, oil, garlic and salt and pepper in a large bowl. Add the chicken pieces to mixture and toss until well coated. Cover and leave to marinate in the refrigerator for 2 hours. Stretch the bacon slices with the back of a knife and then cut each piece of bacon in half. Cut the bananas into 1" lengths and brush them with lemon juice to prevent browning. Wrap a piece of bacon around each piece of banana. Remove the chicken from the marinade mixture, reserving marinade for basting. Thread the chicken pieces and bacon wrapped banana slices onto skewers. Barbecue the kabobs for 8-10 minutes until chicken is completely cooked. Baste the kabobs with marinade and turn frequently.

Watermelon Citrus Cooler
Watermelon Balls
6 bamboo skewers
3 c. watermelon juice
2 c. grapefruit juice
1 c. orange juice
2 tbsp. granulated sugar
Thread watermelon balls onto skewers. Freeze. In your beverage pitcher, blend the watermelon juice, grapefruit juice, orange juice and sugar until sugar has dissolved. Chill thoroughly. Place frozen watermelon ball skewer in each glass. Fill with watermelon citrus cooler and serve.
Serves 6.

Marinated Flank Grilled Steak
1 tbsp. salt
3/4 c. cinnamon
2 tbsp. sugar
2 tbsp. soy sauce
2 tbsp. dry sherry wine
2 lbs. flank steak
Make sauce of salt, cinnamon, sugar, soy sauce and dry sherry wine. Spread sauce on both sides of the flank steak with a large spoon. Let stand atleast 1 hour in the refrigerator, turning occassionally.
Put on a hot grill, 7 minutes per side and cook until done. Slice thin on a slant and serve.

Chocolate Grass
5 cups vanilla ice cream
1 c. milk
1 Tbsp. powdered cocoa
5 tbsp. creme de menthe
2 whole chocolate sandwich cookies, broken
Whipped topping
Optional: Chocolate shavings
Combine all ingredients in a blender. Blend until smooth. Pour into tall glasses and top with whipped topping. Sprinkle with optional chocolate shavings. Makes 4.

Homemade Mounds Bars
1 stick margarine
1 1/2 c. sugar
3 Tbsp. cocoa
3 eggs
1 can Sweetened Condensed Milk
1 c. flour
1 c. nuts
1/2 tsp. salt
1 tsp. vanilla extract
2 1/4 c. coconut
Mix all ingredients but milk and coconut together and pour into a greased 9x13" pan. Bake 20-25 minutes at 350 degrees. Mix sweetened condensed milk and coconut together. Spread evenly over warm brownies. Bake for 20 more minutes at 350 degrees until set. Cool.
Frosting:
3 Tbsp. margarine, melted
3 Tbsp. cocoa
2 Tbsp. milk
confectioners sugar
Mix above ingredients with enough confectioners powdered sugar to make a smooth frosting. Spread on the cooled brownies. Once set, cut into bars.
