Brined Cornish Hens
wash the hens, remove innards.
mix 1/4 cup salt, 1/4 cup honey, crushed black pepper, spices (whatever you like, allspice, nutmeg, etc.) herbs (again, whatever you like) make sure you crush the spices and smush the herbs, garlic, fresh ginger. Mix with orange juice and water. put the hens in the pot and make sure they are submerged.
refrigerate overnight.
remove from the fridge 1 hour before cooking.
take the hens out of the brine, rinse.
cut the backbone out so it's butterflyed.
heat your grill to medium hot.
grill birds bone side down first, then flip to skin side. (grill bone side longer.)
It takes about 30 to 45 minutes to grill the birds to done.
I'll edit later to make this make sense. This is the juiciest way to do birds.

ok... i'm still a looking for the black bean soup recipe.... :holy:
I just did a google search, black bean soup, looks like a lot of recipes there, not sure which kind you wanted, or if you wanted somebody else's already tried and true recipe. Here is irony for you - I took pastry classes, etc, used to make macaroni and cheese, applesause, things like that from scratch. Married a man who is strictly meat and potatoes, boxed mac & cheese and cake mix and frosting from a box.
:bfly: you mean you are married to Forrest too? Geesh, I thought I was only sharing with 'Cess and Jinzles, Ah well as long as it's all in the family I guess.....

Re: …
Peanut butter coconut...something or other
I accidentally created this concoction while working on a peanut satay sauce. It's not quite the consistency of a mousse, but lighter than a pudding. I'm guessing it would be good on banana or chocolate ice cream.
1 cup peanut butter
1 cup coconut milk
Heat peanut butter in microwave for 30 seconds (or until soft and stir-able). Mix in coconut milk and beat with a fork until light and fluffy. It tastes really yummy, but I can't think of any practical applications.

Re: Cooking/Recipes
For your autumnal pleasure
Fruit & Nut Chili Brownies
1 Tbsp butter, melted
1/3 cup almonds
1/3 cup pecans
1/2 cup garam masala (Indian spice)
1/4 tsp cayenne pepper
1/4 tsp. black pepper
1 tbsp brown sugar
1/3 cup dried cherries
1/3 cup dried cranberries
1 tbsp orange juice
1 box brownie mix
1/2 cup chocolate chips
(interesting that there are no eggs called for in the recipe....)
pre-heat oven to 350 degrees. in a bowl, toss melted butter with almonds, pecans, garam masala, cayenne pepper, black pepper and brown sugar. Pour mixture into a baking pan and bake at 350 degrees for 5-7 minutes or until nuts are lightly browned. remove from oven and lower oven temp to 325 degrees.
in a small sauce pan, combine dried cherries, cranberries and orange juice. heat over medium heat for a few minutes to allow dries fruit to plump. set aside and cool before use.
prepare brownie mix according to box directions. fold in cooled dried fruit and nut mixtures and chocolate chips. spread mixture into a greased 13x9" pan. bake at 325 degrees for approximately 25-30 minutes or until toothpick inserted in center comes out clean. remove from oven and allow to cool at room temperature before serving.
--- In everyone's life, at some time, our inner fire goes out. It is then burst into flame by an encounter with another human being. We should all be thankful for those people who rekindle the inner spirit.
