Sophie Snowbunny??
Does anyone know who the little white rabbit called Sophie Snowbunny is? She is from a calico Critters set called 'baby love & care' set. Is she white or cream? Is she part of a family or the only one with her colours?

I only know her from the set you mentioned, the CC "Baby's Love 'n Care" set.
As for her color, that's tricky. What I have is not as white as the Snow-Warren rabbits, but she still seems white to me. But since she's not stark white, I guess you could call it cream or ivory. I really like her.
You can see her on Wendy's site and compare her to Katie Kitty and Susie Snow-Warren, also from CC. Sophie looks much less white compared to them.

A Snowbunny is a white bunny with pink in its ears. Emma Dale is right, its more of a natural white than a stark white like the most recent snow-warrens.
The only other official Snowbunnys are the Snowbunny bride released in Japan and the US and the Snowbunny sister, a limited edition figure from Japan.
However, the bridesmaid and flower girl set that was available in the UK and the wedding set that came with the chapel should probably also be considered Snowbunnys, as they are the same coloring. They were never given an official name.
So, Sophie doesn't really have a family, but you could make one for her.
